Hush Puppies
Ingredients:
2 cups sifted fine stone ground white corn meal
1 tablespoon sugar
2 teaspoons baking soda
2 teaspoons salt
1 tablespoon minced yellow onion
1 egg
1 cup buttermilk
4 to 5 tablespoons cold water
Preparation:
Stir corn meal, sugar, soda and salt together. Place onion in a small bowl. Add egg and buttermilk and beat until frothy. Pour all at once into the meal and stir lightly to mix. Add just enough of the cold water to make dough a good dropping. The dough should hold its shape in the spoon. Drop by tablespoonfuls into hot oil (about 350 to 360°) in deep fat fryer for about 2 minutes or until evenly browned, turning to keep all sides evenly browned.
Makes about 2 dozen.
Dad's Famous Hush Puppy Recipe
Ingredients:
1 bag Dixie Lily hush puppy mix
1 can (12 to 15 ounces) whole kernel corn, drained
1 cup finely chopped onions
1 16oz jar mild salsa or picante sauce
Preparation:
Mix all together in large bowl, until consistency of cornbread batter, stirring until well mixed. Let stand until ready to use, (about 30min.) IMPORTANT: DO NOT STIR or MIX AGAIN!!!!
Drop by tablespoon into hot fat (about 370°) in deep fryer, turning when golden brown. Drain on paper towels, serve. They cook pretty fast.
Note: dip spoon in glass of water after each hush puppy to keep from sticking to spoon. ENJOY!!!!

Combine the cornmeal and flour with the salt and sugar. Blend in the egg and add enough buttermilk to make a thick batter that will drop slowly but easily from a spoon. Add any green onion and other optional ingredients you want, then drop teaspoonfuls into fat (about 375 degrees) at least 3 inches deep. Fry until golden and drain on paper towels. Keep warm in a low (150 degrees) oven until ready to serve.

In a deep fryer or heavy, deep skillet, heat 2 to 3 inches of oil over medium heat to 375°. In a mixing bowl, combine cornmeal mix, flour, and onion. Add milk and egg; mix well. Let stand for 5 minutes. Drop batter by tablespoons into hot oil. Fry until golden brown, turning several times. Drain on paper towels. Makes about 15 hush puppies.

Ingredients:
1 cup cornmeal
1/2 teaspoon salt
3 teaspoons baking powder
3/4 cup buttermilk
1 tablespoon sugar
1 tablespoon flour
1/4 teaspoon baking soda
1 egg, beaten
1/2 cup chopped onion
1 cup fresh or frozen corn kernels or drained kernel corn from can
chopped jalapeno peppers or mild chiles, as desired
Preparation:
Combine all the ingredients; drop the dough by spoonfuls in hot fat (about 365° - 375°) in a deep-fat fryer. Cook until the hush puppies are golden brown.

Ingredients:
1 cup yellow or white cornmeal
1/2 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon sugar
1/2 cup onion; chopped
1 can cream style corn (16 oz)
milk, if needed
Preparation:
Mix dry ingredients. Add onion and corn. Mix well. If more liquid is needed to make desired consistency, add a little milk. Drop heaping teaspoons into deep hot fat, about 360°. Fry until golden brown.
How To Make Hush Puppies
Traditionally served with fried catfish, hush puppies are small balls of fried dough. The recipe below is a standard one.Difficulty: AverageTime Required: 20 minutes
Here's How:
In a mixing bowl, combine 1 cup of cornmeal with 1/2 cup of flour, 1/2 teaspoon of salt, 1 teaspoon of sugar, 1 teaspoon of baking powder, and 1 teaspoon of baking soda.
Blend in 1 egg and 3/4 to 1 cup of buttermilk. The dough should be thick enough to drop from a spoon slowly but easily.
Add any of the following: 2 or 3 tablespoons of grated onion, minced green onion, black or cayenne pepper, or hot pepper sauce.
In a heavy skillet or deep fryer, heat fat for deep frying. The fat should be about 3 inches deep, or deep enough for the hush puppies to float, and the temperature should be around 375°.
Drop teaspoonfuls of batter into the hot fat and fry until golden brown. Remove to paper towels to drain and keep warm while frying the rest.
This recipe should make about 24 hush puppies.
Tips:
If using self-rising meal and flour, omit the baking powder and baking soda.
