HOMEMADE HUSH PUPPIES
2 eggs 2 1/2 c. corn meal (white or yellow) 1 c. buttermilk 1 tsp. salt 1 tsp. soda 1 tbsp. sugar 1 med. onion 1 c. flour
Beat eggs; add buttermilk and stir in dry ingredients. Add onions and mix well. Shape into balls or drop in hot oil with small scoop. Fry until golden brown and float to top. Serve while hot. Serves: 20 to 24.

SAUSAGE HUSH PUPPY MUFFINS
1 lb. bulk sausage 4 eggs, beaten 3 c. buttermilk 2 2/3 c. yellow corn meal 1 1/3 c. flour 2 tsp. baking powder 2 tsp. baking soda 1/2 tsp. salt
Lightly brown sausage. Cool slightly. Add sausage and drippings to a mixture of eggs and buttermilk. Pour sausage and egg mixture into well mixed dry ingredients. Stir until moistened. Fill well-greased muffin cups. Bake at 350 degrees for 30 minutes or until done. Makes 2 to 2 1/2 dozen.

AUNT DAISY HUSH PUPPIES
1 c. meal 1/2 c. flour 1 tsp. salt 1/2 tsp. soda 1 tsp. baking powder 3/4 c. buttermilk 1 hot pepper 1 egg 1 onion
Mix dry ingredients. Add 1 egg, 1 onion and 1 hot pepper. Add buttermilk and mix well. Deep fry.

CECIL'S ARKANSAS HUSH PUPPIES
1 1/2 c. cornmeal 1/2 c. flour 2 1/2 tsp. baking powder 1/2 tsp. salt 1/4 c. chopped onion 1 egg, beaten 1/2 c. milk
Sift dry ingredients together. Add remaining ingredients and stir only until blended. Drop by tablespoon into deep fat, 350 degrees for 3 to 4 minutes or until brown.

HOT HUSH PUPPIES
1 1/2 c. yellow cornmeal 1/2 to 3/4 c. flour 2 tsp. baking powder 1 tsp. salt 1 tbsp. sugar 1 chopped onion 1 egg 1 can cream corn 1 or 2 jalapeno peppers
Mix everything together, adding cream corn last.

SCRUMPTIOUS HUSH PUPPIES
1 c. self-rising flour 1 c. plain flour 1 tsp. baking soda 2 eggs 1/2 stick butter 2 (2") onions, chopped 4 tbsp. sugar Pinch of salt 1 stick celery, chopped Add beer until thick
Melt butter in small saucepan. Add chopped onions and celery; saute until tender. Mix other ingredients, except beer. Blend in celery and onions; add beer until thick. Heat deep fryer and cook until golden brown. Serves 4-6 people.

TAR HEEL HUSH PUPPIES
1 lb. fine cornmeal 1 egg 1 tbsp. salt 1 tbsp. sugar Pinch of soda 1 c. buttermilk
Mix all ingredients with enough water to make batter a thick consistency. Drop by teaspoons into fat. Cook until golden brown. Serves 6.

BAKED HUSH PUPPIES
1/2 c. yellow cornmeal 1/2 c. all-purpose flour 1 1/2 tsp. baking powder 1/2 tsp. salt 1/2 tsp. sugar 1 egg, beaten 1/3 c. evaporated milk, skimmed 1/4 c. thinly sliced green onion 2 tbsp. vegetable oil
Combine first 6 ingredients in a bowl; make a well in center of mixture. Combine egg, milk, onions, and oil. Add to dry ingredients, stirring just until moistened. Spoon 1 tablespoon batter into muffin pan. Bake at 425 degrees for 15 to 20 minutes.

CHEDDAR HUSH PUPPIES
1 c. (4 oz.) shredded sharp cheddar cheese 3/4 c. self rising white cornmeal 1/4 c. flour 2 tbsp. finely chopped onion 1 1/2 tsp. sugar 1/3 c. milk 1 egg, beaten
Combine cheese, cornmeal, flour, onion and sugar. Add combined milk and egg, mixing until well blended. Drop rounded teaspoonfuls of batter into deep hot oil, 375 degrees. Fry 1 to 2 minutes or until golden brown, turning once. Drain; serve warm. Approximately 2 dozen.

HUNT CAMP HUSH-PUPPIES
2 c. water-ground cornmeal 1/2 c. chopped sweet onion Dash salt Six-pack of beer (not light beer) Crisco
Heat Crisco to fry-point in a cast-iron Dutch oven. (This can be determined by dropping a few grains of cornmeal in the grease. If they turn brown and splatter in your face, it's hot enough). Mix the cornmeal and onion together and moisten with beer (about one cup) until the mixture can be made into golf-ball shaped mounds. Drop carefully into the hot fat. They will brown on one side and flip themselves over. Remove and drain when golden-brown.
Any criticism of the above delicacies can usually be diverted by serving the critic the remaining portion of the beer.

2 c. self rising cornmeal 1 c. self rising flour 1/2 tsp. salt 3 tbsp. sugar 3 eggs, beaten 1/2 c. milk 1 lg. can cream corn 1 1/2 c. shredded cheddar cheese 1 lg. onion, chopped 2 jalapeno peppers, seeded and chopped Vegetable oil
Mix drop by spoonfuls in hot oil. Cook until golden brown. Yield: 3 1/2 dozen.

SHRIMP HUSH PUPPIES
2 c. cooked and shredded shrimp 2 (6 oz.) pkg. jalapeno corn bread mix 1 (1 lb., 1 oz.) can cream style corn 1/4 c. chopped green onions and tops 1 finely chopped jalapeno pepper Oil for frying
Shred cooked shrimp in a food processor or chop finely with a knife. In a large mixing bowl, combine all ingredients. Heat oil to 365 degrees. Drop mixture by heaping teaspoonfuls into hot oil. Deep fry until golden brown. Remove from oil and drain on absorbent paper. Makes 5 dozen.

CHEROKEE CLUB'S FAMOUS HUSH PUPPIES
2 qts. water 2 lg. onions, chopped 3 c. cornmeal 1 c. flour 1/2 tsp. baking powder 2 eggs, beaten 1 tsp. salt 1/2 c. shortening
Boil onions in water until tender, about 15 minutes. Mix dry ingredients well. With the water at a full rolling boil, pour dry ingredients in a small amount at a time while stirring. Add eggs and stir. When well mixed and all dry ingredients are scalded, add shortening and stir well. If mixture is gummy, add more shortening. When cool enough to handle, dampen your hands and take about 1 tablespoon mixture in hand and roll into oblong roll. Place these on tray and refrigerate before using. Fry in very hot deep fat. The fat must be deep enough to float the roll. Fry until golden brown.

HUSH PUPPIES FOR 100
8 1/2 c. corn meal 7 c. flour 11 1/3 tbsp. baking powder 2 3/4 tbsp. salt 3 1/2 tbsp. garlic salt 2 qts. and 1/2 c. milk 17 beaten eggs 2 c. finely chopped onion Oil for frying
In a bowl combine corn meal, flour, baking powder, salt and garlic salt. Beat until smooth. Add remaining ingredients.
Using a teaspoon, drop batter into 1/8 inch hot oil in frying pan. Cook for 3 minutes until golden brown. Drain on absorbent paper.

SOUTHERN HUSH PUPPIES FROM VIRGINIA
Cook together:
1 1/2 c. corn meal 1 1/2 c. water
Remove from heat. Add 1/3 cup milk and 1 teaspoon oil and 1/2 cup chopped onions. Beat 2 eggs and add to above. Add 1 cup flour, 3 teaspoons baking powder, 1 1/2 teaspoons salt, 1 teaspoon sugar, sifted together. Beat. Fry at 350 degrees until done.

TUNA HUSH PUPPIES
1/4 lb. American cheese, cut up small 3 hard boiled eggs, chopped 1 can tuna fish, flaked 2 tbsp. chopped green peppers 2 tbsp. chopped onion 2 tbsp. chopped green stuffed olives 2 tbsp. chopped sweet pickle or relish 1/2 c. salad dressing 1 tbsp. Worcestershire sauce
Mix all ingredients together, spread on buns, wrap in foil and store in refrigerator until half hour before serving. Keep wrapped in foil and put in slow (250 degree) oven for 30 minutes. Serves 10 to 12.

3/4 c. yellow cornmeal 1/2 c. all purpose flour 1 1/2 tsp. baking powder 4 oz. shredded Monterey Jack cheese 1 tbsp. chopped green onion Salt to taste 1/2 c. milk Vegetable oil 1/4 tsp. red pepper flakes 1 (4 oz.) can chopped green chiles 1 egg
Combine all ingredients except egg, milk and vegetable oil in a large bowl. Combine egg and milk and stir into dry ingredients until just moistened. Heat 3 inches of oil to 375 degrees, drop batter by tablespoon into hot oil. Fry for 3 or 4 minutes, turning once, until golden brown. Drain on paper towel. Makes about 2 dozen.

HUSH PUPPY (CORN DOGS)
1 c. corn meal 1 c. flour 1 tbsp. sugar 10 hot dogs Oil Mustard
Mix meal and flour together with sugar. Pour enough water in to make batter stiff enough to stick to the hot dog. Roll the hot dog in the batter and drop into hot oil. Cook until brown. Serve with mustard.

1 c. cornmeal 1 tsp. baking powder 1 egg 1 tsp. salt 1/2 c. flour 1/2 c. milk Dash of red pepper 1/3 c. chopped green onions 1 sm. can whole kernel corn, drain (corn, opt.)
Sift dry ingredients in mixing bowl. Beat egg, add milk and add to cornmeal mix. Add onions and red pepper. Drop by small spoon into hot deep fat (350 degrees). Fry until brown. Drain on paper. Makes approximately 2 dozen.

FLO'S HUSH PUPPIES
2 c. cornmeal 1 c. milk 2 c. vegetable shortening 1 lg. egg 1/4 c. finely chopped onion 2 tbsp. all-purpose flour 1/4 tsp. salt 1 tsp. baking powder Dash of cayenne pepper 1 sm. minced garlic
Mix together all dry ingredients, including onion. Make a well in the center, drop in egg, stir in milk and blend well to make a smooth batter. Allow to sit for 2 minutes. Form into teaspoon size balls. Using a deep heavy skillet, heat shortening. Drop batter into hot pan and fry until golden brown. Drain puppies on paper towel when fully cooked. Serve immediately.
