BETTER HUSH PUPPIES
2 c. self-rising corn meal 3/4 c. buttermilk 2 eggs, well beaten 1 sm. grated onion (or diced)
Mix all ingredients together. Set in refrigerator for 20 minutes or longer. Drop by spoonfuls into hot oil (spoon dipped into oil helps batter slide off easier); will float. Turn as needed to brown both sides.

DELUXE HUSH PUPPIES
2 c. yellow corn meal 1/2 c. plus 3 tbsp. flour 1 1/2 tsp. sugar 1 tsp. salt 2 tsp. baking powder 1/2 tsp. soda 1 1/4 tsp. Creole seasoning 1/2 c. buttermilk 2/3 c. water 1/2 c. melted butter 1 egg, beaten 1 c. onion, grated 1 med. green pepper, minced 1 jalapeno peppers, seeded, finely chopped or 1 sm. can chopped green chilies, drained
Combine dry ingredients; add buttermilk, water, butter and egg. Mix well. Stir in onion and peppers. Carefully drop batter by teaspoonfuls into hot oil (375 degrees). Fry 3-5 minutes, turning once, until golden brown. Drain well on paper towels. Yield: 2 1/2 dozen

HUSH PUPPIES WITH ONIONS
1 3/4 c. corn meal 4 tbsp. flour 1 tsp. baking powder 1 tsp. salt 6 tbsp. chopped onion 1 egg, beaten 2 c. boiling water Salad oil
Combine dry ingredients, onion and egg. Add boiling water, stirring constantly until mixture is smooth. Add more water if necessary. Drop by spoonfuls into deep, hot oil.

NORTH CAROLINA HUSH PUPPIES
1/2 c. flour 1 c. cornmeal 1/2 tsp. salt 1/2 med. sized green pepper, finely chopped 1/2 med. onion, finely chopped 1 egg, beaten Scant 1/2 c. water Salad oil 1 1/4 tsp. baking powder
Combine flour, cornmeal, salt, green pepper, onion and egg - mixing well. Stir in enough water to make a thick batter. Refrigerate at least 12 hours. Then stir in baking powder and drop batter by tablespoons into hot salad oil. Fry until golden. Makes about 2 dozen.

BETTY'S HUSH PUPPIES
2 c. cornbread mix 1/4 c. onion, finely chopped 1/2 tsp. garlic salt 1 c. milk
Preheat deep fat to 365 degrees. Mix dry ingredients and add milk. Blend well and shape into balls (about 1 inch diameter). Drop into hot deep fat and cook until browned.

OLD FASHIONED HUSH PUPPIES
2 c. cornmeal 2 tsp. baking powder 1 tsp. salt 1 med. onion (finely chopped) 1 c. milk
Mix dry ingredients together, stir in onion and milk. Using hands, shape into small pones and deep fry at 375 degrees in the oil the fish were cooked in. Cook, turning occasionally until browned, remove to rack to drain or place on paper towels.

BOB'S HUSH PUPPIES
1 1/2 c. cornmeal mix 1/4 c. self-rising flour 3/4 c. buttermilk 2 eggs Pinch of baking soda 1/4 c. onions
1. Mix all ingredients together. 2. Roll into balls. 3. Fry until brown and serve.

EULALIA'S HUSH PUPPIES
2 1/4 c. self-rising corn meal 3 tbsp. self-rising flour 1 tbsp. finely chopped onion 1 egg 1 c. milk
Combine corn meal, flour, onion and egg; beat in milk slowly. Drop spoon full into hot oil where fish was fried (or use hot plain oil). Fry until golden brown. Drain on paper towel. Serve with butter and fish or fried potatoes and green onions. This makes about 16 hushpuppies. Fry in an iron skillet.

OLD SOUTH HUSH - PUPPIES
1/2 lb. onion, finely chopped 1/4 c. catsup 1 c. canned tomatoes, broken into sm. pieces 1 egg 1 1/4 c. yellow or white corn meal 1/2 c. buttermilk 2 c. flour 1 tbsp. baking powder 1 tsp. salt 1/2 tsp. baking powder
Mix onions with catsup, tomatoes, egg and buttermilk. Mix corn meal, flour, baking powder, salt and pepper. Combine with liquid ingredients; mix may be kept in refrigerator until used. When ready to use drop by teaspoons in deep fat fryer and fry until golden brown. Serve hot with honey.

FISHERMAN'S HUSH PUPPIES
2 c. cornmeal 1 c. plain flour 2 tsp. celery seed 3 eggs 2 lg. onions, chopped 8 oz. beer 1 c. buttermilk 1/4 tsp. black pepper
Mix all ingredients. Batter should be stiff. Deep fry.

POTATO HUSH PUPPIES
Cook cornmeal to make 1 cup cooked according to package directions. cool slightly. In a medium bowl, combine the cooked cornmeal, 1 cup flour, 1/2 cup raw cornmeal, 1/2 cup mashed potatoes, 1/2 cup chopped shallots, 2 teaspoons baking powder, 1 1/2 teaspoon salt, 1/2 teaspoon pepper and mix well. Beat 1 egg and mix in until evenly blended.
Pour salad oil to depth of 1 inch into deep skillet or large saucepan. Heat to 350 degrees on deep fat frying thermometer. (Or heat in electric skillet set at 400 degrees.) Shape mixture into 1 1/2 inch balls. Drop into hot fat and fry until golden, turning to brown evenly. Makes 30 to 40.

SOUTHERN STYLE HUSH PUPPIES
1 c. cornmeal 1/2 c. all purpose flour 1 heaping tbsp. sugar 1/4 tsp. salt 2 tsp. baking powder 3/4 c. milk 1 egg 1 med. onion, chopped
Mix dry ingredients, then add milk; mixture will be thick. Add onion and egg. Beat. Refrigerate batter all day (even 2-4 hours helps). Drop the batter from a small spoon into deep fat. Cook over medium heat for 3-5 minutes or until golden brown.

CAJUN HUSH PUPPIES
1 1/2 c. plain cornmeal 1/2 c. flour 1 tsp. baking powder 1/2 tsp. baking soda 1 tsp. salt 1 egg 1 onion, chopped 1 c. buttermilk 1 lg. jalapeno pepper, finely chopped (optional)
Mix all ingredients in a large bowl. Drop with a large spoon into hot oil in a deep fat fryer. Cook until golden brown, turning with a long wooden spoon.
Note: This is a recipe originating in the South Louisiana Bayou Country.

CAJUN HUSH PUPPIES
1 c. corn meal 1/2 c. plain flour 1 1/2 tsp. salt 1/2 tsp. baking soda 1 tsp. baking powder 1/2 tsp. garlic powder 1/2 tsp. cayenne pepper 1/2 c. green onion 1/2 c. corn 1/2 c. buttermilk 2 beaten eggs 2 tbsp. hot oil
Heat enough peanut oil for deep frying in skillet to 375 degrees. Mix all ingredients well and drop by spoonful into hot oil. Fry until golden. Remove with slotted spoon to paper towel. Serve while warm. Wonderful with fried fish, coleslaw and French fries.

GEORGIA HUSH PUPPIES
2 c. self-rising cornmeal 1/2 c. finely chopped onion 1 1/2 to 2 c. boiling water 1 egg, beaten
Fat for deep frying. Combine cornmeal and onion. Stir in 1 1/2 cups boiling water, mixing until well blended. Stir in egg. Add more water if necessary to make a thick batter. Drop by rounded tablespoonfuls into deep hot fat, and fry until golden brown (3 or 4 minutes), turning once. Drain on absorbent paper. Serve hot. Yield: 2 dozen.

GRANDMOTHER'S HUSH PUPPIES
1 c. corn meal 1 1/2 c. self-rising flour 2 tsp. baking powder 1 egg 2 tsp. sugar 1 tsp. salt Chopped onion (we like a lot)
Combine dry ingredients; mix in egg and onion. Add milk a small amount at a time until mixture is stiff like cornbread mix. Drop by teaspoonful into hot grease.

CORNMEAL FRITTERS OR HUSH PUPPIES
1 med. size onion 1 egg 1 c. milk 2 tbsp. oil 1 c. cornmeal 1 c. flour 1 tbsp. baking powder 1 tsp. salt Oil, 1 inch in fry pan
Chop onion finely. Beat egg in large bowl. Add rest of ingredients except fat for frying. Mix well. Heat the oil in fry pan. Drop batter from a teaspoon into hot fat 2 to 3 minutes until golden brown on all sides. Remove from fat and drain on paper towel.

ROCKY RIVER FISH HOUSE HUSH PUPPIES
2 c. cornmeal 1/2 tsp. baking soda 1 1/2 tsp. salt 1 tsp. baking powder 2 tsp. sugar 1 beaten egg 1 sm. onion 1 c. buttermilk
Mix all together first 5 ingredients, then add egg, onion, and buttermilk. Mix all together and let it rest for 10-15 minutes. Heat oil and drop by teaspoon into hot oil. Turn once. Fry to golden brown. They will rise to top when done.

ARTHUR TREACHER'S HUSH PUPPIES
Combine:
2/3 c. club soda 2 1/4 c. biscuit mix 3 tbsp. dry minced onion 1 tsp. onion powder 1 tbsp. cornmeal
Mix all together and shape into 1 inch balls. Drop a few at a time into 425 degrees. Oil at least 3 inch deep in a heavy saucepan or deep fryer. Fry and turn until evenly browned (4 minutes). Drain and keep warm on cookie sheet in 300 degree oven until all have been fried.

CAN'T EAT JUST ONE" HUSH PUPPIES
1 box "Jiffy" corn muffin mix 1 c. self-rising flour 1 egg 1/2 sm. onion, chopped 1/2 med. green bell pepper, chopped Milk to make muffin consistency
Mix all together. Drop by teaspoon into hot fat. If you use a deep fryer it is easier. Take up when golden, drain on brown bag. Keep in warm oven until all are cooked. Delicious with boiled shrimp or any seafood meal.
