BAKED HUSH PUPPIES
2/3 c. yellow cornmeal 1/2 c. all-purpose flour 1 tsp. baking powder 1/2 tsp. salt (opt.) 1/2 c. finely chopped onion 1/3 c. skim milk 1 tbsp. vegetable cooking oil 1 tbsp. chopped parsley 1/8 tsp. pepper 2 egg whites, beaten Vegetable cooking spray
Combine cornmeal, flour, baking powder and salt in medium bowl; make a well in center of mixture. Combine onion, milk, vegetable oil, parsley, pepper and egg whites; add to dry ingredients, stirring just until moistened. Spoon 1 tablespoon batter per hush puppy into miniature muffin pans coated with cooking spray. Bake at 450 degrees for 10 minutes or until lightly browned. Remove from pans immediately. 2 dozen.

IRENE'S SQUASH HUSH PUPPIES
2 c. cooked squash, drain well 1 bell pepper, chopped 1 med. onion, chopped 1 egg 2 tbsp. flour to thicken
Cook pepper and onion with squash; drain. Mix egg and flour to squash. Add salt and pepper to taste. Thicken to consistency of regular hush puppies. Roll a teaspoon at a time in flour and meal. Drop in deep fat, 350 degrees. Cook until golden. Drain on brown paper bag. Can be reheated in microwave.

JALAPENO HUSH PUPPIES
2 c. cornmeal 1 c. flour 2 eggs, beaten 3 tsp. baking powder 1 1/2 tsp. salt 1 sm. can cream style corn 3 jalapeno peppers, chopped 1/4 bell pepper, chopped 1 sm. onion, minced Buttermilk Pinch of soda
Mix all ingredients. Use enough buttermilk to make this the consistency of cornbread batter. Test batter by scooping up a portion on a spoon and with your thumb push portion into medium hot grease. The object of this is to have light, fluffy Hush Puppies. If heavy and do not rise enough, use more baking powder. If Hush Puppies are greasy and break apart, add more flour. If you want more Tang, add some jalapeno pepper juice.

EASY HUSH PUPPIES
1/4 c. yellow cornmeal 1/4 c. flour 3/4 tsp. baking powder 1/4 tsp. salt 1/4 tsp. sugar 1/4 tsp. garlic powder 1/4 tsp. celery flakes 1/8 tsp. dried whole dill weed 1/8 tsp. ground red pepper 1 egg white, beaten 2 tbsp. skim milk 2 tbsp. minced green onions 1 tbsp. minced fresh parsley Vegetable cooking spray
Place first 9 ingredients in a large bowl, stirring well to combine. Combine beaten egg white, milk, and oil in a small bowl, stirring well. Add liquid ingredients to dry ingredients, stirring just until blended. Gently stir in green onions and parsley.
Spoon 1 tablespoon batter into each of 8 miniature (1 3/4 inch) muffin pans that have been coated with cooking spray. Bake at 425 degrees for 15-20 minutes or until hush puppies are golden brown. Immediately remove from pans, and serve warm. Yields 8 small hush puppies. Does not rise while baking, so as much batter you put in the pan is as high as they will be.

LULA'S SOUTHERN HUSH PUPPIES
2 c. cornmeal 1 tbsp. all-purpose flour 1 tsp. soda 1 tsp. baking powder 1 1/2 tsp. salt 1 c. buttermilk 1 egg, slightly beaten 2 tbsp. finely chopped onion Salad oil or shortening
Combine dry ingredients; add buttermilk, egg, and onion, stirring well. Carefully drop batter by tablespoonfuls into deep hot oil; cook only a few at a time, turning once. Fry until hush puppies are golden brown, usually 3 to 5 minutes. Drain well on absorbent towels.
For variety, you could add chopped jalapeno peppers, pimento, bacon, or cheese to the batter.

Measure 2 1/4 cups corn muffin mix, saving remainder for other uses. Combine mix with eggs and minced onion. Stir well. Carefully drop batter by tablespoonsful into deep, hot oil (370 degrees). Cook a few at a time, turning once. Fry 1 1/2 minutes or until hush puppies are golden brown. Drain on paper towels. Yield 2 dozen.

CRISPY HUSH PUPPIES
1/2 c. sifted flour 2 tsp. baking powder 1/2 tbsp. salt 1 beaten egg 3/4 c. milk 1 1/2 c. cornmeal 1 sm. onion, finely chopped (optional) 1 tbsp. sugar
Sift together dry ingredients; add onion. Add beaten egg and milk to dry ingredients and stir. Drop a teaspoon of batter for each hush puppy into hot deep fat (360 degrees) frying only a few at a time. Fry until a golden brown. Drain on absorbent paper.

LIGHTER THAN AIR HUSH PUPPIES
1 c. self-rising cornmeal 1/2 c. self-rising flour 1 med. onion, chopped fine 1 tsp. catsup 2 oz. beer 1 egg Salt and pepper (liberal) Buttermilk (less than 1/2 pt.)
Stir together above ingredients. Add buttermilk to make thick batter. Refrigerate for 30 minutes. Pour 1/2 to 1 inch oil in iron skillet. Spoon batter into hot oil. Fry until lightly browned. Place hush puppies in a warm styrofoam ice bucket to keep warm. Serve hot.
If you don't happen to have beer on hand or if you are a teetotaler, then you may leave out the beer (hush puppies won't be as light), or you may use 1/2 envelope of yeast, dissolved in a small amount of warm water instead of the beer. (About 1/4 cup of water should be sued to dissolve the yeast in.)

Combine first 5 ingredients in a mixing bowl. Add remaining ingredients; stir well. Let batter stand 5 minutes.
Carefully drop batter by level tablespoons into deep hot oil (370 degrees); cook only a few at a time, turning once. Fry 3 to 5 minutes or until hush puppies are golden brown. Drain well on paper towels. Makes about two dozen.

BEST EVER HUSH PUPPIES
1 c. self rising cornmeal 1 c. self rising flour 1 can cream style corn 1 egg Diced onions Salt & pepper Tabasco (if you like them hot)
Mix cornmeal and flour together. Add other ingredients and mix only until blended. Drop by spoonfuls into hot deep fat. Turn when brown. Remove and drain. Batter should not be made ahead of time.

CHILE CHEESE HUSH PUPPIES
3/4 c. yellow cornmeal 1/2 c. all purpose flour 1 1/2 tsp. baking powder 4 oz. shredded Monterey Jack cheese 1 tbsp. chopped green onion Salt to taste 1/2 c. milk Vegetable oil 1/4 tsp. red pepper flakes 1 (4 oz.) can chopped green chiles 1 egg
Combine all ingredients except egg, milk and vegetable oil in a large bowl. Combine egg and milk and stir into dry ingredients until just moistened. Heat 3 inches of oil to 375 degrees, drop batter by tablespoon into hot oil. Fry for 3 or 4 minutes, turning once, until golden brown. Drain on paper towel. Makes about 2 dozen.

HUSH PUPPIES, REGULAR OR JALAPENO
2 c. cornmeal 2 tbsp. flour 1 onion, chopped 1/4 c. milk 2 tsp. salt 2 tsp. baking powder 1 egg 1 or 2 tsp. red pepper 1/2 tsp. black pepper 1 jalapeno pepper, chopped
Pour enough boiling water over meal, salt, flour, chopped onion and pepper to form a stiff mush. Add this to milk; mix well. Beat in egg and baking powder. Drop by spoonfuls in deep hot oil. Fry until golden brown.

DEEP-FRIED FISH & HUSH PUPPIES
2 lb. salmon fillets, silver or red Cornmeal Oil for deep frying 1/4 c. flour 2 tsp. baking powder 1 1/4 tsp. salt 1 c. milk 1 egg 1/2 c. onion, finely chopped Parsley Lemon
Coat fish fillets with cornmeal, reserving excess. Fry fish in hot oil (370 degrees) 2 to 3 minutes or until golden. Drain on paper towels and keep warm in oven. Add enough cornmeal to reserved cornmeal to make 1 1/2 cups. Stir with flour, baking powder and salt. Beat milk with egg and add onion. Stir until combined. Drop by heaping tablespoon into hot oil until puffed and brown. Serve with fish and tartar sauce. Garnish with parsley and lemon. 6 servings.

2 c. corn meal 1 tsp. soda 1 tsp. salt 6 tbsp. chopped onion 2 tbsp. flour 1 tbsp. baking powder 1 egg 2 c. buttermilk
Mix all dry ingredients, add chopped onion; then milk and egg, beaten together. Drop by small spoonsful into boiling deep fat. They will float when done. Drain on paper towels.

HUSH PUPPY MIX
1/2 c. minced onion 1 tbsp. sugar 2 c. cornmeal 2 eggs, well beaten 2 tbsp. baking powder 1 tbsp. salt 1 c. self-rising flour 1 c. buttermilk
Combine all but eggs and milk. Add eggs and enough milk to make like pancake mix (approximately 1 cup). Let stand a few minutes, then dip teaspoon in cold water, then in batter. Drop by spoonfuls into hot oil. Makes approximately 24.

Mix all ingredients together. Add milk to desired consistency. Drop in hot oil by teaspoonfuls. Will float to top and turn over when done.
